Savory Spiced Soda
4 whole star anise
1 tablespoon pink peppercorns, plus more for garnish
1 teaspoon whole allspice
2 cups water
1/2 cup sugar
1/2 bunch fresh thyme
1 (2-inch) strip lemon zest
Garnish:
Ice cubes
1 liter chilled club soda
4 whole star anise
Fresh thyme sprigs
Pink peppercorns
Heat a stainless steel pan over medium-high heat. Add the spices and stir to toast for 2 minutes. Remove the spices and add to a clean spice grinder.
Coarsely grind and reserve.
Add the water and sugar to a medium-sized saucepan and bring to a simmer. Stir to dissolve the sugar. Add the spices and the thyme. Cover, reduce the heat, and let simmer for 5 minutes. After 5 minutes remove from heat and carefully strain the hot syrup through a fine sieve to remove the coarse spices. Chill before using.
To serve, fill 4 cocktail glasses with ice. Add 1/4 cup spiced simple syrup to each glass. Top with club soda and a star anise pod and stir. Garnish with thyme sprigs and peppercorns and serve.
