Cherry Garcia Ice Cream

3 eggs
1 cup sugar
1 cup whole milk
2 cups half and half (or whipping cream – depending on desired richness and calorie count)
1 (12 oz) can evaporated milk
1 tsp vanilla extract
½ cup dark chocolate shavings
½ cup pitted Bing cherries – cut into quarters

Beat eggs well. Stir in sugar. Mix well. Add all milk and vanilla. Stir until completely smooth. Pour into ice cream maker. Churn in ice cream maker according to manufacture's directions for 20 – 25 minutes. Stir in chocolate and cherries. Place in freezer until hardened to desired consistency.

Chocolate Syrup
1 cup boiling water
1 cup sugar
1 ½ Tablespoons unsweetened cocoa powder
1/2 teaspoon vanilla extract
1 Tablespoon cornstarch

Dissolve sugar in boiling water. Stir in cocoa and cornstarch. Mix until smooth. Stir in vanilla. Refrigerate.
